Ingredients for avocado mayonnaise

  • 2 finely mashed avocados
  • ¼ cup extra virgin Hermanos Catalan olive oil
  • 1 tsp raw agave syrup
  • 2 tbsp freshly squeezed orange juice
  • 2 cm freshly grated ginger
  • 6 tbsp unpasteurised Apple cider vinegar
  • ½ tsp Khoisan fleur de sel or ORAC Botanico-mix mild

Preparation of avocado mayonnaise

Blend all ingredients in the Magimix to a smooth, creamy mayonnaise. Add more avocados if the mayonnaise is not creamy enough.
